Bison Tortilla Soup

Ingredients:
- 2 lbs ground bison
- 1 bag frozen corn
- 2 cloves garlic (minced)
- 1 can pinto beans
- 1 can great northern beans
- 1 chopped onion
- 32 oz beef broth
- 1 tsp chili powder
- 1 tsp red pepper flakes
- 2 tsp cumin
- 3 tsp butter
- 2 cups heavy cream
- 2 10 oz cans red enchilada sauce
- 1 block cream cheese
Instructions:
- In a large pan, sauté ground buffalo in skillet over medium high heat with onion.
- Place cooked meat and onion in crockpot and stir in cream cheese so melted.
- Add in all other ingredients into crockpot. Rinse beans prior to placing in crockpot.
- Turn crockpot on high for 4 hours or low for 6 hours.
- Top with sour cream and enjoy.
